Delicious Mediterranean Lentil Stew Esau traded his birthright for a bowl of Jacob’s Lentil Stew. After trying this recipe you may understand why!
This recipe has been in my family for generations. It is a delicious combination of lentils & rice with aromatic spices! It is super budget friendly, delicious, nutritious and a favorite comfort food my family loves!
Recipe:
Ingredients:
2 cups Spanish Brown Lentils (you can use any lentil but it’s best if they still have their skins and aren’t decorticated so they can maintain their shape better).
2 cups Nature’s Blend Rice (but any rice will work)
4-6 tablespoons Extra Virgin Olive Oil
2 tablespoons garlic powder
1 tablespoon salt
2 teaspoons black pepper
2 teaspoons tumeric
2 teaspoons coriander
1/2 teaspoon allspice
8 Green Onions chopped
Plain Yogurt (optional)
Instructions:
Place all ingredients in a large pot and cover with 1 inch of water. Add a couple of tablespoons of olive oil. Stir well to mix in ingredients. Bring to a boil on medium high heat then lower to a simmer on medium low heat. Cover and stir every five minutes. Click on medium low for 30 to 45 minutes. Add more water if needed. Once the lentils and rice are tender, and there is very little water left it is ready.
The lentils and rice will absorb any extra water. If they are too dry or not tender, add more water and cook longer.
Dish up your lentil stew into a bowl and drizzle extra-virgin olive oil on top of it. Sprinkle with a little bit of salt to taste and top with chopped green onions or caramelized yellow onions. You may also top with hot pepper flakes and/or plain yogurt or sour cream as well!
