Einkorn: The Wheat Berry that Yah Made!!!

Einkorn is the wheat berry that Yah made! Meaning it is the original first wheat berry ever created, and it has not been hybridized by man! It’s an ancient grain that does things for our body that regular wheat can not do!


Einkorn, like other natural plants, is a diploid, which means it has two sets of chromosomes, while modern bread wheat has six sets! What does this mean? Einkorn only has 14 chromosomes. Modern wheat has 42 chromosomes! This means that its gluten is different from the gluten found in modern wheat varieties like hard red, soft white and hard white wheat berries! In fact, Einkorn does not contain the D genome instead contains the A genome! The most widely used test for detecting gluten tests for the presence of the D genome.


Studies has found that not only Einkorn, but also Spelt is high in carotenoids, something modern wheat is not high in. What’s the big deal about carotenoids? Well carotenoids are believed to reduce the risk of diseases such as cancer and especially macular degeneration! Meaning, carotenoids are good for our aging eyes! Sprouting einkorn under natural light increases the carotenoid availability in the einkorn making it a powerhouse superfood! And einkorn supports healthy eye health for other reasons as well! Research shows that lutein, zeaxanthin and beta-carotene, which are prevalent in einkorn, may protect the eye’s because they can absorb harmful light that enters our eyes!


A study on animals using ancient grains like einkorn and spelt, showed that ancient wheat diets reduced cellular processes tied to glucose and fat metabolism, potentially helping to prevent or delay diabetes. Similar outcomes have been seen in other animal research!


Fresh-milled einkorn flour is naturally high in phenolic acids, which are plant compounds found in fruits and vegetables that help protect the body from oxidative damage and diseases like heart disease, stroke, and some cancers. A study published in the Journal of Food Science and Technology looked at how these beneficial compounds and antioxidant levels changed when einkorn was processed into flour, water biscuits, and puffed kernels. The researchers found that even after einkorn transformed into a biscuit or a puff it maintained its high levels of phenolic acids!


Einkorn is one of the most delicious wheats I have ever tried. It’s my absolute favorite for making cookies and dutch oven bread! Men tend to love the taste of Einkorn bread over other breads! My husband loves it and over the years of selling einkorn, I can’t tell you how many times I’ve heard my customer say “My husband loves einkorn bread!” I believe that our bodies naturally crave what is good for us. I believe there is something in Modern wheat that is good for man. Just like the Bible says: bread is good for your heart! That’s because the wheat that Yah made (Einkorn) is good for your heart!


How do you bake with einkorn? Einkorn has a stickier consistency than modern wheat that you just have to accept! Don’t overcompensate by adding too much flour to your recipes. It proofs much faster, so be careful not to over proof. These tips will help you easily incorporate einkorn into your favorite recipes, so you and your family can start enjoying the flavor and the many health benefits of einkorn!
