Creamy Wild Rice Soup Recipe

There are a lot of ways to make this Creamy Wild Rice Soup, but here is my take! My family and I love wild rice, and the flavor it gives our fall veggie soups we like to make! This soup is now our absolute favorite! We actually fought over it! LOL!!!
In fact, I made an 8 quart pot of this soup last night and our family of five finished it today by lunch! It’s loaded with veggies and veggie broth, and we used a simple roux made with fresh-milled einkorn flour to give it it’s creamy taste and texture. We also added a bit of plant based heavy whipping cream (optional) to make it even creamier! You can substitute the veggies you prefer and add your favorite protein to make it your soup, but don’t be afraid to try it our way and enjoy this delicious whole food, plant based super healthy soup!!! You will NOT be disappointed!!!

Creamy Wild Rice Soup:
Ingredients:
1lb wild rice (Canoe Wild Rice)
4 quarts vegetable stock
1 cup olive oil plus 1/4 cup set aside for sauteing veggies
1 cup fresh-milled einkorn flour
1 cup heavy whipping cream (plant based) (optional) 10 ribs of celery (rinsed and diced)
4 medium to large carrots (peeled, rinsed and sliced)
2 large onions (diced)
1 bulb of garlic (separated, peeled and minced).
8 small golden or red potatoes (rinsed and diced)
1 tablespoon salt
1 tablespoon black pepper
2 teaspoons allspice
hot pepper flakes (optional)
Directions:
Pour 1/4 cup olive oil in an 8 quart sauce pan. Sauté onions on medium heat for 3 minutes, then add celery. Saute onions and celery until slightly golden brown on edges and somewhat translucent. Turn heat on low and add garlic and saute on low for 2-3 minutes until the garlic is softened. Add the wild rice, carrots and potatoes to the pot and immediately add enough broth to cover all of the rice and veggies with 1 inch of broth. Turn up the heat to medium high until it comes to a boil and then lower it to a slow simmer and cover the soup. Stir the soup mixture every few minutes to make sure the rice isn’t sticking. Add more broth if needed as it cooks.
Now it's time to make your roux! While your waiting for the wild rice and veggies to soften and cook, take a non-stick pan or iron skillet and heat it to medium heat. Then add one cup of olive oil to the hot pan and let it heat up. Slowly incorporate the cup of fresh-milled einkorn with a whisk into the hot oil, mixing it until it’s one consistency and thickens and bubbles. After adding all the flour then start adding 1 quart of vegetable broth slowly to the roux while its on medium heat. It will bubble and thicken up at first but then will start to thin out as you add more broth slowly. Just remember to stir constantly until it’s one consistency. Add 1 tablespoon salt and 1 tablespoon pepper and stir to mix. Turn off heat and set the roux aside. Once all the the wild rice, potatoes and carrots are softened and cooked, then slowly start to incorporate your roux into your soup pan by slowly pour it in, stirring it really well to blend the roux with the soup broth. Mix until the consistency of the soup broth is smooth and creamy.
Add 2 teaspoons of allspice to the combined soup mixture and stir well. Add more salt if needed to taste. Add hot pepper flakes to add a little heat to this soup! Add 1 cup heavy whipping cream if you want it even creamier. (Note: If you want or need more broth for this soup add more vegetable broth and cook on medium until it’s stirred in and incorporated fully). This soup can either be served as a stew with less broth or a soup with more broth! Either way it’s absolutely delicious!!!
The wild rice gives this soup a naturally smoky flavor and chewy meaty consistency. You will not miss the meat in this veggie soup! Not to mention, there is 24 grams of protein in 1 cup of wild rice!!!
The allspice is my secret ingredient I use in almost all my fall and winter soups that turn the soup from just warm to warm & cozy!!! Trust me don't leave out the allspice! Let us know how you like it when you make this amazing soup! We appreciate your honest feedback!!!
